M is for Menu.

Well, life got has gotten so busy that along with blogging my menu plan went out the window, now it's time to get back to it. Eating healthy & mostly organic and local is important to me and the only way to make that possible on a budget is to plan your menu! Lately I have been transforming not so healthy dishes to healthy ones... Tater Tot Casserole is one that I will share you later this week!

T: Honey Lime Enchiladas

W: Poppyseed
Chicken & Garlic Green Beans

T: Chicken Tortilla Soup

F: Pumpkin French Toast, Bacon & Fruit

S: Broccoli Casserole & Roasted Squash

S: Popcorn Chicken, Roasted Potatoes & Caesar Salad
